Sous Vide Pork Tenderloin served with crackling, saffron swede puree, garden peas and burnt butter sauce

Atzes’ Corner ‘The Mob’ Montepulciano 2015
Medium to full bodied the palate possesses juicy ripe dark cherry and dark plum flavours 
over some subtle inky earth infusions, spice and liquorice. Bright acid finish with slightly chalky but balanced tannins. 

Dessert

Hazelnut chocolate fondant, smoked banana mousse, grapefruit

Vinteloper Tourigna Nacional 2015
Umami rich, with BBQ smoke and tomato life, ripe black forest fruits, spicy to finish. Texture of soft salted caramel
